Chicken cordon blue crepes...
What do you need...
Crepes recipe:
2 eggs
1/2 cup milk
1/2 cup water
2 tablespoons butter, melted
Mix all ingredients in a large bowl.
I have a crepe maker, so I used that to make them, but you can also use a small frying pan. Heat a lightly oiled frying pan over
medium high heat. Pour 1/4 cup of the mix into the pan. Tilt the pan with a circular
motion so that the batter coats the surface evenly. Cook the crepe for about 2 minutes, until the bottom
is light brown. Loosen with a spatula, turn and cook the other side.
What you need for the filling for 4 crepes (or more):
1 chicken breast (diced and cooked)
1 cup alfredo sauce
4 slices ham
4 slices cheese
1 cup spinach
When the crepes are done, top with a spoonful of alfredo sauce and spread evenly, then top with ham, chicken, cheese and spinach. Wrap up and enjoy!
